The chef is incredibly particular about both the ingredients and the cooking methods, resulting in exquisite flavors that reflect his unique vision. I was able to enjoy a variety of dishes in small portions, as well as a diverse selection of pairings. I had been feeling somewhat bored with food lately, as many restaurants seem to rely on popular ingredients like sea urchin, salmon roe, and tuna, thinking they would be delicious and visually appealing. However, I was pleasantly surprised to rediscover the satisfaction of truly changing flavors in the ingredients. While the prices are on the higher side, I will definitely return.
