In mid-July, I went for lunch alone.It’s not an exaggeration to say this is the best tonkatsu of my life.The taste was truly moving.The tenderloin was astonishingly soft, with a rich aroma of fat that felt incredibly light. The umami of the meat spread beautifully, and the coating was crispy and airy. The harmony between the meat and the coating was exceptional, fulfilling all the elements one would expect from an ideal tonkatsu.On that day, they served "LYB Pork."This rare breed has extremely fine muscle fibers and a low melting point of about 30°C, resulting in a light flavor that melts in your mouth.According to the owner, LYB Pork is not consistently available in terms of supply and quality, making it one of the rarest brands offered at this restaurant. Additionally, because the pigs are small, the amount of loin that can be obtained is limited, making it a very rare cut.I was truly lucky. My friend has been here several times but always had "TOKYO X," while I had the unexpected fortune of trying LYB Pork on my first visit. That alone was a stroke of luck, and I even got to enjoy the rare loin cut. It was a day blessed with culinary fortune.Not only the tonkatsu but also the side dishes and condiments showed no compromise.What impressed me the most were the tonkatsu sauce and the miso soup.The sauce was rich and flavorful, with a strong umami presence, yet the aftertaste was surprisingly mellow. The miso soup contained mushrooms, which harmonized beautifully with the miso. It had a deep umami flavor reminiscent of cream soup, and I personally loved it.While making a reservation can be challenging, I believe it will not disappoint.
