The variety of dishes was incredible, taking about four hours to enjoy everything...The appetizers, featuring tomato candy and sawara ham, made a striking visual impact.The sea bass was salted (and then possibly desalted?), served on a bed of pumpkin, perfectly blending sweetness and saltiness.The signature bonito dish, resembling a rose jelly, was beautiful, and the bonito itself was satisfying, living up to my expectations.Other dishes like monkfish, fugu flan, and tenderloin were also delicious.I truly believe it’s quite challenging to elevate the presentation and flavors using so many ingredients from Chiba Prefecture.The drink pairing was exclusively with Aramasa (JPY 12,000).
