Nestled in a quiet residential area of Nishiazabu, Ji-Cube is a renowned restaurant where you can enjoy exquisite Chinese cuisine that blends tradition and innovation. The interior features a sophisticated modern space, with soft lighting that elegantly enhances your dining experience on special occasions.The owner-chef, Tomokazu Sasa, honed his skills for many years at the prestigious Sichuan restaurant, Szechuan Hanten. While grounded in the solid techniques he developed there, he pursues the essence of "Ji"—representing Japanese quality ingredients, Just (optimal cooking), and Joy (delight)—to create delicate dishes that maximize the natural flavors of the ingredients.Overall, the lunch course I enjoyed was an incredible value at JPY 6,600, offering a level of satisfaction that far exceeded expectations! The powerful flavors of Sichuan cuisine harmoniously coexist with the subtlety of Japanese ingredients, resulting in a surprising and delightful composition.The first dish, tuna marinated in Doubanjiang and Shaoxing wine, featured an astonishingly rich texture of tuna, complemented by the aromatic depth of Shaoxing wine and the spicy kick of Doubanjiang. It was the perfect starter to heighten anticipation.Next, the mouthwatering "Yodare Chicken" became a personal favorite. The chicken, cooked to perfection, was incredibly tender, and the complex spiciness of the sauce combined with the richness of black vinegar and the crunch of nuts created a harmonious trio. It truly lived up to its name, "so delicious it makes your mouth water," stimulating all the senses.The clam chawanmushi with scallion and pepper sauce featured a rich clam broth that was beautifully enhanced by the refreshing scallion and pepper sauce. The use of aromas here was masterful, evoking the essence of Sichuan cuisine.The Wagyu beef in oyster sauce was reminiscent of a luxurious sukiyaki. The blanched Wagyu was surprisingly light, with the rich oyster sauce elegantly coating the sweetness of the fat. The delicate cooking technique preserved and even enhanced the meat's umami.The shrimp in chili sauce was unlike any I had tasted before. The large, plump shrimp were simmered in a deep chili sauce that was not just spicy but also concentrated with fermented richness and umami, making it so delicious that I wanted to savor every last drop of the sauce.The egg fried rice, with its beautiful golden hue from the karasumi, was a feast for the eyes. The different "salty" and "umami" notes from the cod roe and karasumi intertwined, creating a luxurious flavor that expanded with every bite.To finish, the Kato pork char siu noodles featured the sweetness and umami of Kato pork infused into the broth, clinging perfectly to the thin noodles. Even when full, the refined and layered flavors made it easy to enjoy.From the jasmine tea dessert to the overall experience, Chef Sasa's talent shone through, making for a highly satisfying course. It was a great meal!
