This beautiful standalone restaurant retains the charm of a traditional Japanese house, and upon entering, you are greeted by an overwhelmingly beautiful space where the essence of the ancient capital beautifully merges with modern sophistication. It truly is a hidden gem, perfect for enjoying a special time.Leading the culinary team is Chef Hirobumi Saito, a prominent figure in Japan's Chinese cuisine scene. With the theme of "tradition and innovation," he expresses a unique world of "Hanare" that can only be experienced here, based on the solid techniques he honed at Tsukiji and Tsukiji Ichirin.The restaurant's greatest commitment is the marriage of Japan's finest ingredients with Chinese culinary techniques. Innovative courses that bring out the true flavors of fresh seafood from Sagami Bay and carefully selected local chicken continue to captivate the palates of visiting gourmets.This time, I indulged in the luxurious "Lunch Course."The meal begins with "Jasmine Rice Porridge." As I take the first bite, the elegant and fragrant aroma of jasmine gently wafts through my nose, heightening my anticipation for the upcoming courses while warming my stomach.Next is the "Sashimi of Aori Squid from Sagami Bay, Snap Peas, and Jellyfish," where the rich sweetness of the squid contrasts delightfully with the crispness of the snap peas and the crunchy texture of the jellyfish, creating a refreshingly enjoyable dish.Following that is the restaurant's signature dish, "Danjyo Takasaka Chicken with Spicy Sauce." The perfectly tender chicken is coated in a sauce that combines the sharpness of mala, the richness of black vinegar, and the nuttiness of roasted nuts, resulting in an incredibly delicious experience. Dipping the juicy "Gyoza" into the leftover sauce and then pairing it with the smooth "Sansho Noodles" creates a three-step tasting style that is nothing short of entertainment.Next is the "Stir-fried Wrasse from Sagami Bay with Mustard." The sweetness of the fluffy fish, the spicy kick of mustard, and the flavor of Kujo green onions create a perfect balance.After a refreshing break with the rarely available stir-fried water lily, I moved on to the final dish, "Sauce-less Dan Dan Noodles." The rich sesame flavor and spicy sauce cling to the noodles, and despite being full, I finished it in no time.The dessert, "Shiso Sorbet," is astonishingly fresh with the aroma of shiso, instantly refreshing my palate.
