The drying process brought out its rich flavor with every bite. The fried Amago was soaked in the broth, making it tender and delightful. The jade eggplant was also juicy.★ Mapo HamoMapo Hamo??? I had never heard of it before, so I asked multiple times. The hamo (pike eel) was blanched. I was surprised to find it paired with tender beef tendon! The spiciness was mild at first, but it gradually built up, so I was advised to soften it with a soft-boiled egg. I could either place the soft-boiled egg on rice for a delicious egg over rice or enjoy it however I liked! Although I felt a bit guilty, I ended up making a Mapo Hamo egg over rice!I will definitely come back! It was a great meal! ♪
