I visited Sharikimon Onozawa in the summer. What left a particularly strong impression on me that day was the seasonal sweetfish. The beautifully plated dish was aromatic, and the flesh was tender. I could fully enjoy the slightly bitter richness of the liver, making it a luxurious treat that truly represents summer. The other dishes also showcased delicate flavors that highlighted seasonal ingredients, and you could feel the careful craftsmanship in each item. The exquisite cooking and seasoning that brought out the natural flavors of the ingredients truly reflected the excellence of a renowned Japanese restaurant. The calm atmosphere and warm hospitality were also delightful, allowing me to once again appreciate the joy of savoring the seasons. I look forward to enjoying the autumn and winter dishes on my next visit. It was a great meal.
