Rin, ranked 2nd in the eel category in Shizuoka Prefecture and 11th nationwide.It is said to be the second branch of "Seirin," but it has an independent atmosphere that doesn’t strongly suggest a connection. This restaurant primarily serves unajyu (grilled eel over rice) during lunch hours. I made a reservation for a weekday lunch through OMAKASE a month ago and chose the course featuring "Shikou Unagi from Lake Hamana."I arrived a bit early, but was promptly shown to my seat. I opted for grilled eel, and the chef suggested adding half a portion of grilled eel without sauce, which I gladly accepted. Before cooking, they showcased a beautiful eel, and then the charcoal grilling began right in front of me. The enticing aroma of charcoal wafting through the restaurant heightened my anticipation before the meal even began.Everyone has their own criteria for delicious unajyu, but for me, the most important aspect is the crispy, fragrant skin. It’s the first thing you notice with the first bite. The eel here had everything perfectly executed except for the crispiness of the skin. The flesh was fluffy and tender, melting in my mouth. The tare (sauce) for the grilled eel was not just sweet; it was rich in umami, beautifully enhancing the eel's natural flavors. The rice grains stood out individually, absorbing the eel's fat and sauce without becoming mushy, maintaining an ideal texture. However, if the skin had been a bit crispier, I would have considered it a flawless dish. That said, for those who prioritize aspects other than the skin's texture, this is undoubtedly a wonderful quality that will leave you very satisfied.As for the added grilled eel without sauce, it felt a bit less impressive compared to the grilled eel with tare. I usually enjoy the taste of the eel itself with the grilled version, but the pairing with the tare of the grilled eel here was overwhelmingly better, so I plan to stick with just the grilled eel on my next visit.There wasn’t anything particularly noteworthy about the appetizers or pickles, and the liver soup had a very standard flavor, but these were merely side dishes, so they didn’t bother me much.After finishing my meal, I felt like my understanding of unajyu had deepened once again. This visit was a wonderful experience that made me want to explore various restaurants and enhance my culinary experiences further.【Rating Criteria】5.0: A restaurant that stands at the top of its genre.
