I had the opportunity to see the rice cutting process in person and even got to taste some samples. The head chef is focusing on his role as president for their expansion into Europe, so one of his apprentices prepared the sushi for us. By chance, the head chef returned to Japan, and I was able to have a conversation with him. It’s clear that there are reasons behind the success of this bustling restaurant. I was truly impressed by the head chef and the owner, who prioritize their people. I can't wait to visit again soon. It was a great meal.
