Rather than simply using high-end ingredients to create a lavish appearance,this restaurant brings out the best in the ingredients through cooking techniques,aromas, textures, and the layering of seasonings.Instead of the typical boldness associated with Chinese cuisine,there are layers of fragrance and umami in each dish,making every bite increasingly intriguing.The use of oil is light, allowing for a pleasant dining experience throughout the course.What stood out to me was how it is based on classic Chinese dishes,yet feels completely fresh and modern.It’s not about trying to be quirky or avant-garde,but rather it made me appreciate once again how fascinating Chinese cuisine can be.Simply outstanding.
