Sushi Ikkou is a restaurant where the "ingredients, craftsmanship, and atmosphere" harmonize at an exceptionally high level.What stood out to me the most was the sharp eye for selecting ingredients and the skillful cutting and cooking techniques that bring out the best in each item. Every piece of sushi had a very clear outline, yet the flavors were never overpowering, offering a pure and expansive taste.The nigiri had a wonderful unity between the fish and the rice, creating a sensation where the flavors and aromas naturally unfolded in my mouth. The robust texture typical of Hokkaido seafood was also captivating, especially the unforgettable Kin-ki.Moreover, the atmosphere of the restaurant and Mr. Kudo's warm personality made for a very pleasant experience.
