The course starts with a skewer that has crispy skin bursting with flavor. ◆ Chicken Sashimi - Kyoto Takasaka Chicken, breast meat and liver I love liver sashimi; it’s rich and creamy, almost like butter. The breast meat has excellent texture. ◆ Mushrooms and Dried Chicken Breast At first glance, I thought the chicken breast was a type of cured fish roe. It’s shaved, making it fluffy, and when you take a bite, the flavor spreads beautifully. ◆ (Skewered) Heart No unpleasant odor, with just the right amount of chewiness. It was softer than I expected. ◆ Chicken Shumai Soup First, enjoy the soup, then break apart the shumai. The gentle seasoning seeps through. ◆ (Skewered) Liver Rich and creamy liver. ◆ (Skewered) Chicken Thigh with Homemade Harissa Sauce The homemade harissa sauce is rich and delicious. It has a hint of curry flavor, with a good balance of acidity and sweetness, and isn’t too spicy. It felt creamy, almost like cheese, even though it didn’t seem to contain any. ◆ Fermented Fruit Tomato with Noodle The chewy noodles are complemented by the sweetness of the fruit tomatoes. ◆ Calf - Kinome (young leaves of Japanese pepper), Tosa vinegar Kinome is said to be the young leaves of Japanese pepper. ◆ Toast - Chicken breast rillette, zucchini, and yuzu pepper The crunchy toast is generously topped with rillette. It’s incredibly delicious. Rillette is a paste made from shredded meat. ◆ Rare Cuts of Chicken Thigh, Sori and Obi - Zucchini and yuzu pepper Full of flavor and chewiness. These cuts are from near the rear and front thighs. Even though they are from close parts, the flavors are distinctly different. ◆ Chicken Wing with Green Onion - Fresh pepper paste Green onions are stuffed into the space where the bone was. The fresh pepper adds a wonderful aroma and works well. The meat’s flavor is irresistible. ◆ Osmanthus Granita with Fig A refreshing palate cleanser. The balance of the osmanthus aroma and the sweetness of the fig is exquisite. It feels almost French. ◆ Rolled Ground Chicken Rice & Red Miso Soup made with Chicken Broth To finish off, we had ground chicken rice and red miso soup. The ground chicken rice comes with four types of condiments, and you can have a refill. I was at my limit, but it was so delicious that I ended up trying all four types. ◆ Dessert - First: Fruit Candy, Shine Muscat, and Shink It’s wrapped in something like jelly rather than candy. Sweet, cool, and refreshing—so delicious. - Second: Smoked Fresh Caramel Rich and sweet fresh caramel. I enjoyed it with a spoon.
