Located about a 5-minute walk from Nagahama Station on the Hokuriku Line, Kyogoku Zushi is my favorite sushi restaurant that I always visit in the summer for the fresh sweetfish. This time, I was particularly impressed by:1. Jin Doi Squid StuffedThe Jin Doi squid from Sasae Maeda Fish Shop. I’ve had this squid several times at Onishi, a kaiseki restaurant in Yaizu, but this was my first time enjoying it with sushi rice. The chewy texture combined with the sweetness of the squid and rice was absolutely delicious!2. Kyushu-Produced Hon Maguro AkamiKyogoku’s signature dish features akami marinated on kombu before being served. The summer tuna had a mild acidity, yet the umami flavor was rich and balanced, making it the best akami I’ve ever had.☆ Assorted Platter (Iwashi Nori Roll, Sweetfish Simmered, Biwa Trout Namero)☆ Maguro (Flatfish) Sashimi with Egg Yolk Ponzu☆ Hiragai (Surf Clam) Grilled with Seaweed☆ Jin Doi Squid Stuffed (Sasae)☆ Hairy Crab from Wajima, Hokuriku with Ponzu Jelly☆ Tempura (Hokuriku Anago, Yomogi, Turnip)Vegetables from Minori Farm☆ Chilled Chawanmushi with Sweet Shrimp and Shiso◇ Sweetfish Newborn Preparation◇ Kinmedai (Sasae)◇ Hanadai (Sasae)◇ Isaki (Sasae)◇ Biwa Trout◇ Kyushu-Produced Hon Maguro Akami◇ Kyushu-Produced Hon Maguro Back Fat◇ Kohada◇ Aji from Hokuriku◇ Saba◇ Bafun Uni◇ Anago from Tsushima◇ Steamed Sushi with Tachiuo (Sasae)◇ Toro Taku○ Sasae Soup○ Two Types of Tamago: Edomae and Kansai○ Yubari Melon Sorbet□ Ebisu Small Glass□ Nami no Ne Eetokodori Junmai Super Dry□ Nanahon Yari Kin no Wa Namamoto□ Matsu no Tsukasa Tousui Junmai Daiginjo
