Last night, I visited "Aspirant," a creative French restaurant located on Kitano-zaka in Sannomiya! They offer an incredible selection of Japanese ingredients, and each dish is beautifully paired with a variety of exquisite sauces.I enjoyed dishes featuring Rishiri sea urchin, Awajishima conger eel, hairy crab, dragon's eye fish, and grouper, along with matsutake mushrooms, fresh abalone, foie gras, and summer venison.The accompanying vegetables were also carefully selected for their quality.The wine and Japanese sake pairings were chosen to complement the flavors of the dishes.Honestly, this was the best meal I've ever had!The next reservation is in November 2029.
