I visited HATSUNEZUSHI as the sushi chef is graduating from the restaurant. It had been about a year and a half since my last visit.The restaurant is about a 5-minute walk from Kamata Station. Founded in 1893, it has received two Michelin stars for ten consecutive years, Tabelog AWARD 2026 BRONZE, and is listed among the top 100 sushi restaurants in Tokyo by Tabelog for 2025, making it a well-established and reputable establishment.Both the exterior and interior are stylish and create a calm atmosphere.There are two rooms: "Sea Room" and "Mountain Room," and I was guided to the Mountain Room this time.The menu consists of only one course priced at JPY 8,800.The course included the following:- Mozuku from Ishikawa (rice tasting)- Lean tuna with salt- Medium fatty tuna- Seared tuna with smoked daikon and green onion wasabi soy sauce (pickled ginger)- Kohada (gizzard shad)- Aori squid- Longfin tuna- Aoyagi clam with sudachi- Sardine- Tokishirazu (young tuna)- Marinated bonito- Sea urchin (purple)- Anago (sea eel)- Kanpyo roll- Clear soup with fish- Tamagoyaki (Japanese omelet)- Dessert (served in the Western-style room on the second floor)That was the entire course.The meal began with the rice being cooked to perfection, and the sushi was prepared right in front of me. Then, the tuna from Funka Bay was served, and I was drawn into the world of sushi.While enjoying the chef's craftsmanship, everything was delicious, but the marinated bonito, which can only be tasted here, left a particularly strong impression on me.Although it had been a while since my last visit, the young staff supporting the restaurant and those graduating are all thriving as artisans at their respective stages, which is wonderful. The service was also exceptional.Moreover, the master who creates such a restaurant, nurtures young talent, and sends them out into society is truly remarkable. I feel that many batons of skill and tradition are being passed down from the master to the next generation.I wish them all the best in their new endeavors.It was a great meal.
