It was my first time experiencing the bitterness of sweetfish in such a beautifully delicious way. Starting with its stunning presentation, the appearance, aroma, and flavor were all exceptional, especially paired with the striking golden Languedoc white wine. This French restaurant, where I could choose from carefully selected ingredients, is a gem that I’m glad is not in Ginza. The rustic charm of Nishikoyama remains intact...
