It had a nice bounce without being too tough, and with each bite, a delicate sweetness and umami spread across my palate—it was incredibly delicious. The fat content was just right, leaving a refreshing aftertaste that made me want to eat more, especially with the lemon soy sauce.The anago (conger eel) has been surprising me lately with its various aspects across the country. I can’t quite explain how it achieves such deliciousness, but it’s a must-try.○ Fried Sawara (Spanish Mackerel) with Nerve-Ending TechniqueThe cooking was perfect, with a crispy coating and a fluffy interior, allowing the flavor of the sawara to shine through 100%. It was artistic. The accompanying citrus was tasty, though not quite to my preference. It cleared my palate and served its purpose well.【Service】Good.Also, I appreciated that the menu included many names.【Overall Impression】There was a booklet on the table explaining the nerve-ending technique, which described it as "a single strike to the head of the fish caught." I found that quite amusing.Overall, this course allowed me to savor the best ingredients from Ehime in their prime, reflecting the aesthetic of subtraction typical of Japanese cuisine. The orange juice was surprisingly delicious, and I ended up drinking quite a bit. I think it’s quite cost-effective that I could enjoy all this food and drink for under 30,000 JPY.The wording on the website is quite intense, so I highly recommend checking it out before you go.
