I visited LATURE to enjoy the Menu Terroir〈Earth Course〉for a special occasion. The chef, who is also a hunter, conveys a deep respect for life with the philosophy of "not wasting a single drop of blood," which is beautifully reflected in each dish.【Menu Terroir〈Earth Course〉】◆ Venison Blood Macaron - A specialty of the restaurant. This savory macaron features a delightful combination of chocolate flavor and a slightly salty cream infused with pepper.◆ Salmon Amuse-Bouche - A delicate dish wrapped in a crisp dough made from Tokachi's Meikuin potatoes, filled with rich salmon paste.◆ Chilled Corn Soup - Made with a variety of corn called "Aurora," this refreshing soup is topped with lemon foam, enhancing the overwhelming sweetness of the corn.◆ Homemade Yeast Bread and Unsalted Butter - The bread comes from the adjacent bakery, MONICA. The fragrant wheat flavor pairs perfectly with the unsalted butter, showcasing exceptional quality.◆ Sea Bream Appetizer - This salad features kombu-cured sea bream paired with rice and finished with a wasabi sauce for a refreshing touch.◆ Game Pâté - A luxurious pâté made from Ezo venison, bear, and wild boar. The fruity accents of loquat, red daikon, and cassis sauce harmonize beautifully.◆ Grilled Sweetfish in Pastry - A dish prepared without using the sweetfish's liver. Classic butter and white wine sauce adds richness.◆ Roasted Ezo Venison - The main dish is roasted Ezo venison. As the chef is a hunter, the processing after the hunt is impeccable, resulting in a dish that has no unpleasant taste, just the right amount of wild flavor. The cooking is superb, and the rich red wine and foie gras sauce elevates the meat's umami to perfection.◆ Dessert & Petit Fours - - Salted Tomato and Sweet Orange Vacherin, Crème Brûlée, and Cheese Ice Cream. - Wild Boar Fat Financier, which has a richness unique to wild boar fat, is a fitting conclusion to the meal.To accompany the dishes, I enjoyed a non-alcoholic "Kouka-fuu (Lychee)" and sparkling water. This restaurant offers an experience that transforms the concept of game, and I definitely want to visit again.
