After a long time, I went on a trip to Dogo Kaishu near Dogo Onsen. I want to go back, especially in winter. The restaurant offers a wonderful variety of ways to enjoy the deliciousness of white fish. The ingredients are, of course, top-notch, but they also focus on how to enhance the dining experience. While the photos may not do it justice, I particularly enjoyed the Isaki and Sawara. The Fugu, Sea Bream, and Anago were also delicious. The dashi was delicate and gentle, truly delightful. What impressed me the most was that my companion, who usually doesn’t eat raw fish, finished everything because it was so good. It was a great meal. Thank you.
