Nestled in a quiet residential area of Harajuku, I enjoyed a bowl of Hitachi Aki soba, cultivated by the owner himself, near the Wakita Shrine.From sowing to harvesting, sun-drying, milling, and stone grinding, every step of the soba-making process is handled by the owner, resulting in a true work of art.The coarse soba bursts with aroma with each bite, perfectly balancing a firm texture and smooth throat feel.The thick soba broth served at the end is so delicious that you could drink it on its own! ✨️The tamagoyaki has a fluffy, melt-in-your-mouth texture infused with dashi aroma, and the grated Japanese radish adds a refreshing touch, making it an elegant dish that you can't put down.The biggest surprise this time was the grilled shrimp marinated in miso. The Saikyo miso enhances the shrimp's sweetness, with a crispy exterior and fluffy interior.
