I made a reservation and visited during the weekend lunch hours. It takes about 20-25 minutes by express or limited express train from Niigata Station, but since I had plans afterward, I drove there with a friend in a rental car.Founded in 1954, this restaurant has over 70 years of history, and the head chef is the third generation. While the fish from Niigata is excellent, the standout feature is the vegetables. Everything was delicious, but I was particularly impressed by the fluffy sweetfish roe and the hand roll with freshly harvested young corn. The sushi was well-seasoned with sardine fish sauce. The salt and wasabi were also delightful. The tamagoyaki (Japanese omelet) was like a pudding, and I thoroughly enjoyed the local ingredients until the very end. It was a great meal!
