I arrived at Unagi Musashino around 10:15 on a weekday, 45 minutes before opening. Despite the early hour, there was already a line of about 15 people. Although the restaurant typically opens at 11:00, we were kindly allowed inside at 10:30. This was very considerate, and thanks to that, I managed to get in just in time for the first seating.At 11:30, my long-awaited rice bowl arrived. I ordered the "Unaju" with a large size (+ JPY 200) and "Kimo-sui" (JPY 300) for a luxurious treat. Today’s eel was sourced from Mikawa, Aichi Prefecture. The wait time since I started lining up and my hunger level were perfectly aligned, building my anticipation even before I took a bite.When I finally tasted it, the impact of the first bite was incredible, and as I continued eating, the depth of flavor exceeded my expectations. The staff advised me, "It’s better to add the sansho pepper later," but the balance between the sauce and the eel was so perfect that I personally found no issue enjoying it as is. In fact, the slight char on the skin added a pleasant bitterness that enhanced the overall flavor.As is often the case when I eat Unaju, I was so taken by the deliciousness that I quickly finished it all in one go. This truly is the taste of Unagi in Urawa.
