I finally visited a restaurant I had been curious about for a long time. To sum it up, I felt that the value for money at JPY 8,800 was quite high.The rice was slightly firm, and the sushi was a bit loose. This balance was personally to my liking, and the sensation of it naturally breaking apart in my mouth was delightful.What stood out to me first was the chutoro (medium fatty tuna). Served with salt, the sweetness of the fat was accentuated, making it incredibly delicious.The akami (lean tuna) had a robust umami flavor, and the toro-taku (fatty tuna with grated daikon) had a great balance of texture and fat, providing a satisfying experience. The kohada (gizzard shad) was perfectly marinated, showcasing a high level of craftsmanship while remaining classic.The quality of the ingredients in the grouper and clam was straightforwardly conveyed, and the squid and horse mackerel also reflected careful preparation in their sushi.Furthermore, the meal continued with hairy crab, bonito, sea urchin, and anago (conger eel), making it quite fulfilling.After settling down with the final arazuke (fish soup), I enjoyed the kanpyo maki (dried gourd roll) and tamago (egg). The tamago, in particular, had a sponge-like texture that was memorable.After the meal, I was guided to an upper room where I could leisurely enjoy some fava bean ice cream and rooibos tea, which was a nice touch.Reservations are quite difficult to make, but given the satisfaction at this price point, it’s understandable. I would love to visit again.It was a great meal.
