I visited LATURE, a renowned French restaurant in Omotesando, which has been featured in the Michelin Guide, Tabelog Bronze, and among the top 100 French restaurants. The owner-chef is also an active hunter, and one of the main attractions here is the opportunity to enjoy venison sourced directly from his hunts.**Signature Dish: Venison Blood Macaron** Unlike typical macarons that use egg whites, this one is made with venison blood. While blood is usually drained to maintain the freshness of the meat, the restaurant's concept emphasizes not wasting any part of the animal, incorporating the blood into the dish. This reminded me of a dish from "Grand Maison Tokyo" that featured venison blood in a consomme. The macaron is filled with a rich boudin noir made from venison, delivering a strong umami flavor with a hint of pepper.**Vichyssoise** This cold potato soup is made with French potatoes and garnished with shiso leaves for a vibrant green color, topped with beautiful purple shiso flowers. The flavor is gentle, refreshing, and light, perfect for summer.**Striped Horse Mackerel Carpaccio** This dish features tartare of striped horse mackerel hidden within the fillet. It is accompanied by seedless grapes, yuzu pepper oil, pickled onions, yogurt sauce, and dill. The aroma of celery, finished with liquid nitrogen right in front of me, was fantastic, and the combination of fresh ingredients harmonized beautifully with the mackerel.Next up is the signature **Pâté en Croûte**. This luxurious dish features three types of game: bear, deer, and wild boar. At the center is a foie gras terrine, topped with venison consomme jelly, and served with blueberries, pickled sakura daikon, and orange marmalade. It’s a decadent way to enjoy multiple types of game at once.**Ayugai Wrapped in Puff Pastry** This dish intentionally omits the liver, allowing the delicate flavor of the fish to shine. It is paired with scallops and river nori, served with a beurre blanc sauce made with Hokkaido sake. The inclusion of slightly bitter vegetables creates an interesting composition that evokes the essence of ayu without using its liver.**Main Course: Hokkaido Ezo Deer Thigh with Poivre Blanc Sauce** This dish features a sauce made with red wine and black pepper, complemented by two-year-aged Hokkaido Meikuin potatoes, shiitake mushrooms, lotus root, chive flowers, and eggplant. It offers a robust game flavor without any unpleasant odor, and the meat quality is outstanding. This was one of the most memorable dishes of the course.**Dessert: Water Mochi Made with Natural Water from Aso** This beautiful dessert combines pistachio ice cream, figs from Kagawa, caramelized hazelnuts, and lightly sweetened red bean paste, all drizzled with chocolate and black syrup. The restaurant's name, "LATURE," means "drops of nature," and this dessert beautifully expresses that concept. We also enjoyed coffee and cookies after the meal.Throughout the meal, Chef Murata personally greeted us, and the serving staff provided attentive service. The level of service matched the high quality of the food. With counter seating available, it’s easy for solo diners to enjoy this highly-rated restaurant, and I was pleasantly surprised by how relatively easy it was to make a reservation. Despite its clear focus on game, the pricing is approachable, making for a highly satisfying first visit. If you're looking to enjoy authentic game in Omotesando, this is definitely a place I want to revisit. It was a great meal!
