Nestled in a quiet alley in Mita, Japanese cuisine Seizan was a long-awaited visit for me. From the moment I stepped inside, I was overwhelmed by its pristine ambiance and the unwavering elegance of its atmosphere.The dishes I enjoyed were a stunning composition that engaged all my senses—taste, smell, sight, and texture.The standout dish was undoubtedly the "Udon with Abalone and Sea Urchin." The udon, coated in a rich and deep liver sauce, was lavishly topped with sea urchin and firm abalone. The moment it touched my lips, the fresh scent of the ocean and the layered umami flavors left me speechless with delight.Additionally, the "Grilled Eel Rice" that appeared later in the course was exquisite. As I lifted the lid of the beautifully decorated bowl, a fragrant aroma wafted out. The eel, perfectly grilled to a crisp exterior while remaining astonishingly tender inside, was complemented by a refined sauce that made each bite a joy until the very last morsel.The meal continued with a series of dishes that stimulated the senses:• A dish served on a lotus leaf: Its refreshing presentation perfectly captured the essence of a Japanese summer.• Simmered Winter Melon with Shark Fin: The delicate texture of the winter melon infused with a subtle broth harmonized beautifully with the melt-in-your-mouth umami.• Mango Dessert: Ripe and sweet mango, served in a delicately cut glass, elegantly concluded the course.Each dish reflected the chef's exceptional skill and respect for the ingredients.The quality of the cuisine was outstanding, but the satisfaction derived from spending time in this special space called "Seizan" was equally high. It provided a rare experience that made me forget the everyday hustle, striking a perfect balance between formality and comfort.I look forward to returning to immerse myself in this world again with the changing seasons.
