Not only the dishes but also the plates, the ambiance of the restaurant, and the pricing of the sake all reflect the essence of Kyoto cuisine. I felt a strong sense of pride from the chef, who believes that chefs should earn their living through their cooking, as the sake is offered at cost price. In a time when many restaurants require you to order a bottle of wine just to secure a reservation, it was refreshing and surprising to find a place like this. Of course, every dish was delicious, and Chef Kanamori's warm personality made me feel that I would love to return if given the chance.
