Photos of the dishes are not allowed, so instead, I focused on the meal and the chef's conversation.I've only been here 5 or 6 times, but the sushi rice is still delicious, and the cutting is excellent.The rice is firm and smooth, not crumbly or rough, and it pairs perfectly with the toppings. Each grain is enjoyable to chew, making it truly delicious.I've visited many high-end sushi restaurants in Tokyo and other areas, but Shimbashi Shimizu stands out as exceptional when it comes to the rice.I would be satisfied even if they served just the rice as nigiri, haha.Of course, the toppings are also fantastic.Personally, I love the use of roasted sake, which is wonderful.Everything was delicious again this time.
