The straightforward name reflects the rarity of Tajima beef, which I enjoyed in both sukiyaki and shabu-shabu styles. This Tajima beef completely changed my perception of beef—its smooth texture and melt-in-your-mouth quality, even in the lean cuts, along with a lingering umami flavor... it's truly unforgettable.
