(^_^)vThe greatest charm of Kyuu is undoubtedly the freshness and meticulous management born from a "love for meat."They are committed to using chilled black-haired Wagyu beef, directly sourced from Yamagata and Sendai, with absolutely no freezing involved. The fact that they don’t even have a freezer shows their dedication to preserving the meat's natural flavor and juiciness.Moreover, the owner, Mr. Obara, carefully polishes the meat and manages the temperature according to each cut. They only select truly delicious meat, focusing on the beautiful balance of lean and fat in Akita beef.For grilling, they use high-quality binchotan charcoal for authentic charcoal grilling. Instead of a gas roaster, they grill using charcoal shichirin. By setting the distance between the grill and the charcoal close, they achieve a perfect char on the surface while locking in the meat juices inside, showcasing their craftsmanship. The meat, lightly infused with the aroma of charcoal, highlights the sweetness of the fat, making it truly "so tender that you don’t need teeth" in terms of deliciousness.In the evening, the focus is on omakase courses like the "Tomokyu Course" and "Maku Course."
