After several years, I finally visited again! Last time was in Hokkaido, and this time it was my first visit to the new location in Ginza, thanks to an invitation. Although there were no specialties that day, I was excited to see what the summer menu would offer. The atmosphere was crisp and refined, yet Chef Kudo had a warm demeanor. This contrast added to the charm of the place. The dishes were delightful, with flavors and aromas that lingered beautifully. The way the ingredients, like the fresh water clam, were presented was impressive. The balance and combinations of the ingredients were remarkable.I didn’t feel fatigued at all from eating.The abalone and sea urchin were a highlight. First, the aroma of the abalone hit me, followed by the sea urchin, and then they harmonized perfectly, with the abalone's fragrance returning at the end. This meticulously crafted dish was simply irresistible.It was truly breathtaking! I understand why one would want to come back even at this price!The young staff assisting were surprisingly capable, which impressed me!I would love to visit again if the opportunity arises, especially to try the specialties!
