I arrived 30 minutes before opening on a holiday. There were about 30 people in line, and I was informed that I would be in the second round. At the same time, the owner announced that they would open 30 minutes early to minimize the wait for customers. I was impressed by the thoughtful explanation, showing how much they care about their guests.I entered the restaurant just after 11:30, so the wait time was a little over an hour for the second round. On that day, the menu featured only one type of unagi donburi, the Aichi Prefecture's new baby eel donburi, priced at JPY 6600. The unagi, which takes 30 minutes to steam, was astonishingly tender and had a melt-in-your-mouth texture. The richness of the fat was incredible; I initially thought it might be too heavy on my stomach with the first bite, but it turned out to be completely unfounded, as the fat was not overwhelming, and I enjoyed it until the end.The sauce, generously drizzled over the dish, was exquisite—not too salty and not too sweet. While it was delicious with sansho pepper, I preferred it without, as the lack of heaviness in the sauce and fat allowed the flavors to shine through more directly.Of course, the food was delicious, but I also felt a great deal of care in the service, making this a truly wonderful restaurant.■ Order: New Baby Eel Donburi ■ Visit: Holiday at 10:30 ■ Wait: About 1 hour ■ Price: Reasonable
