The fatty tuna, horse mackerel, red clam, swordfish with wasabi, smelt, engawa (flounder fin), squid, sea urchin, shrimp, negitoro (green onion and fatty tuna) roll, bonito, dried gourd, cassero egg, and mango Imo Shochu, all seasoned with kombu soy sauce, were absolutely delicious!!! This became my favorite memory from my trip to Miyazaki. The chef's lively sushi-making and conversation, along with his warm personality, and the wonderful attentiveness and good voice of his apprentice made this one of the most enjoyable sushi experiences I've ever had! Additionally, the prices were surprisingly low; I believe it would cost at least 1.5 times more in Tokyo. I definitely want to visit Isshin Sushi Koyo again on my next trip to Miyazaki.
