Still, I thought to myself, "No matter how rough the road, let’s walk with a smile," inspired by a famous quote from Inoki. Without hesitation, I made my way to Sugita. (^^)【Atmosphere of the Restaurant】 The color of the noren (entrance curtain) had changed with the season to a vibrant green.Upon entering the restaurant, I was greeted by the refreshing and serene atmosphere that is characteristic of Sugita. They seemed to beckon for some Japanese sake.The sushi began, of course, with the classic Kohada, which is now a staple of the Sugita experience. Chef Sugita humbly mentioned that the fish wasn’t as fatty as usual, but even so, the quality was assured from the way it was prepared. Today, there was an interesting twist with Haruko placed between two pieces of tuna, which worked surprisingly well.I always think that Sugita's sushi is both dignified and subtle... it melts in your mouth, disappearing like a fleeting moment. And once again, the overall composition and flow of the meal were exceptional. It was truly a beautiful sushi experience, like a performance. To conclude, the Asari soup served by the owner was heartwarming. (^^)Even now, despite its esteemed reputation, Chef Sugita continues to refine his craft while deeply contemplating the essence of traditional Edomae sushi, which is commendable.【Service】 As always, the cheerful and attentive staff member, Hashi●, was flawless.
