On a rainy weekday, I thought it would be a good opportunity, so I arrived about an hour before opening. I was second in line. Thank you for opening the restaurant 10 minutes early! I ordered the "Shin-Ko Gozen" (Unagi Rice Box, Liver Soup, Pickles, and Grilled Liver Set). That day, there were only three servings of the Shin-Ko Gozen left. By 11 AM, the place was fully booked. The grilled unagi liver had a delightful crunchy texture with a creamy feel, and it was delicious with very little aftertaste. As for the liver soup, I hadn’t had it in a while, so I can’t compare, but it tasted quite salty after such a long time. Now, about the unagi itself, the staff explained that our unagi has no unpleasant smell or strong flavor, so they recommended enjoying it without sansho (Japanese pepper) at first. Taking a bite, the unagi was soft and melt-in-your-mouth tender, with just the right amount of fat—it was incredibly delicious! I found myself grinning after finishing my meal; it was truly that good. I believe there are various ways to prepare unagi, such as Kanto-style and Kansai-style, but this restaurant transcends those cooking methods with its amazing flavors. It’s clear this is a popular spot, and I will definitely be coming back!
