This soba restaurant is conveniently located near Higashi-Nagasaki Station. I visited for lunch and quickly ordered some sake along with the tamagoyaki (Japanese omelette) and kujira ume-ae (whale with plum).The appetizer was a crispy snack infused with the aroma of soba and shirasu with sansho pepper. It was perfectly seasoned and quite delicious. The kujira ume-ae, made with the skin of the whale and seasoned with plum, was a rare delicacy with a gentle saltiness and the rich flavor of whale fat—absolutely exquisite. The tamagoyaki was a savory, non-sweet dashi omelette, soft and oozing with flavor.For the final dish, the inaka soba (country-style soba) was cut into easy-to-eat thin strands, with a strong soba aroma. I tried it with salt, but I personally preferred it with soba dipping sauce, which enhanced the flavor. Overall, the balance of saltiness and the care put into the dishes was evident. After enjoying some soba-yu (hot water used to rinse soba), I felt satisfied and grateful for the meal.
