The scallop mousse paired beautifully with the tender sweetfish and the crispy pastry, complemented by a white wine and butter sauce.For the main dish, I had the Ezo deer inner thigh. The finely textured red meat was moist and tender, releasing a rich umami flavor with every bite.The dessert was a refreshing Mojito Parfait, perfect for summer.I had a wonderful and happy time enjoying dishes filled with the chef's love for game meat. ʕ•ᴥ•ʔ
