This time, I had the Loin Cutlet Set Meal for JPY 8,500.■ Tonkatsu First, I was surprised by the deliciousness of the batter. It wasn't just a crispy coating; the breadcrumbs had a sweetness reminiscent of bread itself, leaving a lasting impression. The meat was so tender that I could cut it with chopsticks, yet it was still juicy. It didn’t just focus on tenderness; it also provided a satisfying feeling of eating meat. Of course, the flavor was excellent! I tried several ways to enjoy it, but personally, I preferred it with wasabi soy sauce. What stood out the most was the fat. Usually, when I reach the last piece of a loin cutlet, I sometimes feel a bit heavy if it has a lot of fat, but here, the fat itself was sweet and didn’t feel heavy at all. I enjoyed it all the way to the last piece, thinking, "I still want more!" I couldn’t see into the kitchen, but I was curious about the cooking method. Even though it’s a fried food restaurant, I hardly heard any frying sounds. I was very curious about how they achieved this result.■ Attention to Detail Beyond Tonkatsu Even the side dishes left a strong impression. The cabbage was fluffy yet crunchy. The rice had a sweetness to it, and it was delicious even with just salt. The salt itself was tasty. The pickles were also delicious, and nothing felt ordinary. For some reason, even the water tasted good; was it just regular water?■ An Intimate Space and Service That day, there were only four customers. It seems that only four reservations are accepted! No wonder it’s hard to get a reservation! It was very quiet, providing a luxurious time to focus on the food in front of me. I felt a bit nervous visiting after seeing some detailed rules on the website beforehand. However, I was warmly welcomed, and the service was excellent. There was no stiffness, allowing me to enjoy my meal at a leisurely pace.■ Overall Impression At first glance, JPY 8,500 seems quite high for tonkatsu. Still, after waiting a year and a half, I felt it was worth the experience. This tonkatsu is enjoyable not just for the meat, but also for the batter, fat, rice, salt, pickles, cabbage, and even the atmosphere. I don’t know when I’ll be able to make another reservation, but next time, I definitely want to try the Tenderloin!
