I enjoyed it simply paired with the strained liver.〇 Eggplant Somen with Baby Octopus Thinly sliced eggplant is coated with a generous amount of kudzu starch and shaped into somen noodles. It has a refreshing taste, making it a perfect summer appetizer.〇 Sea Urchin Sushi〇 Akou (Red Sea Bream) and Eggplant Soup〇 Tsukasa (Young Yellowtail) and Octopus Sashimi〇 Grilled Awaji Hamo (Pike Conger) with Three Levels of Cooking The first was quite rare. Then, I tried two more versions, each cooked for an additional 20 seconds. It was refreshing to have it served grilled. Only the skin was cooked, leaving the flesh with a wonderfully tender raw texture, and the skin didn’t linger in the mouth, making it a delightful experience. Personally, I preferred the middle level of cooking the most.〇 Hamo with Jelly〇 Grilled Sweetfish A reasonably sized sweetfish is grilled on a front grill and finished on a hearth-like grill. I could enjoy it from head to tail without worrying about bones. The creamy and rich yuzu vinegar, blended with rice porridge and kombu broth, made it a unique and delicious take on the typical grilled sweetfish.〇 Sesame Tofu This sesame tofu is truly at a level that everyone should try to replicate. It is meticulously crafted with sesame, kudzu starch, and kombu broth, and while it feels firm when scooped with a spoon, it surprises you with its smoothness once it’s in your mouth.〇 Stewed Whale Meat with White Miso I absolutely love whale meat. I wouldn’t even make oden if I couldn’t find this ingredient. It was prepared with great care and time, resulting in a soft and tender texture, and the use of evening gourd as a vegetable was both rare and impressive.〇 Grilled Hatahata (Sandfish) with Rice〇 Uzaku Rice The perfectly grilled eel paired with lightly pickled cucumber was so delicious that I could eat it endlessly.〇 Hamo Chazuke (Rice with Broth)〇 Dessert〇 Chilled Zen Zai (Sweet Red Bean Soup)〇 Thin Matcha..Finally, my long-awaited first visit. I was reminded once again that I tend to love restaurants run by people from Wakuden.Overall, the dishes were delicious and satisfying without being overwhelming, which is a delight for a foodie like me. The chef was also very accommodating with questions about the dishes, making it a wonderful place to dine.Additionally, the pricing is quite reasonable, which is appreciated.
