I visited this restaurant for the first time in a while, and it was my first visit since the renovation.On this occasion, I opted for a pairing menu, starting with a toast with champagne.The sweet shrimp, which is one of their specialties, made a strong impression! The dish highlighted the sweetness of the shrimp and its umami, raising my expectations.The zucchini marinated in sake lees and blue cheese paired with IWA was exceptional. The combination of fermentation, blue cheese, and Japanese sake was perfect.While pairings with French cuisine or Italian restaurants can sometimes feel unbalanced with Japanese sake, this pairing was truly excellent.The ash palmentier made with purple eggplant was also delightful. The eggplant paired well with the oil and absorbed the rich fat of Noto beef, creating a luxurious dish.Finally, the crab risotto with aioli sauce was exquisite.Overall, the balance of flavors was excellent, and it's easy to see why this place is so popular.To finish, the herbal tea made with several types of herbs from Noto was also wonderful.It was a great meal!
