A popular yakiniku restaurant in Musashi-Shinjo that is notoriously hard to book. I’ve wanted to visit this renowned yakiniku spot for years, and finally took a day off to go (laughs).■ Ordered Menu - Omakase Course (JPY 18,000)■ Course Contents - Kimchi - Kaku-teki (radish kimchi) - Tracheal Cartilage Sashimi - Omasum Sashimi - Tongue - Outside Skirt - Liver - Pickled Cucumbers - Outside Knuckle - Knuckle Main Muscle - Hanging Tender - Tsunami - Premium Tripe - Sweetbread - Colon - Aorta - Beef Cheek - Cold Noodles - Curry - Ice Cream (choose from vanilla, yuzu sorbet, chocolate, or strawberry)■ Impressions The freshness was evident from the very first sashimi. The tracheal cartilage sashimi had a unique texture that was enjoyable, and the omasum sashimi was prepared with great care. It paired perfectly with the vinegar miso!The signature tongue dish was delicious, with a perfect balance of tenderness and elasticity. The flavor expanded with each bite, making it easy to see why it’s so popular.Personally, I was particularly impressed by the outside skirt, hanging tender, and liver. The outside skirt was rich in flavor, juicy, and so tender that it could be eaten without teeth. The hanging tender also released an explosion of flavor with every bite. The liver was incredibly fresh, with a quality that was rich yet not heavy.The quality of the red meat, such as outside knuckle and knuckle main muscle, was also high, allowing us to enjoy the distinct characteristics of each cut. Among the horumon, the premium tripe, sweetbread, colon, and aorta followed, and the freshness and careful preparation made the unique flavors of horumon less pronounced, which was impressive.Not only was the quality of the meat outstanding, but the attention to detail in preparation and seasoning made for a delightful course from start to finish. It was also nice that they checked in on how full we were throughout the meal.The meal concluded with cold noodles and curry, and the option to adjust the portion size was a nice touch. Dessert was also well-prepared, providing a high level of satisfaction.This place offers exceptional sourcing power and incredibly fresh horumon, along with exquisite tongue, outside skirt, and hanging tender. It’s a must-visit for any yakiniku or horumon lover!
