I visited for lunch.Tateshina is such a quiet and wonderful place.The interior is very clean and stylish, with the sound of crackling firewood.While the cuisine is based on Italian, it is cooked over wood, infusing each dish with a unique aroma and incorporating fermentation in various ways, resulting in many impressive dishes.Especially the dish featuring grilled sweetfish, which was slowly roasted over wood. The combination of red shiso juice and pine bud oil, supported by the gentle sweetness of fermented figs, created a beautifully balanced flavor.I appreciate dishes that have a clear intention behind their unique combinations.It was a great learning experience.
