This was my first experience at a Michelin three-star restaurant. To be honest, I was a bit nervous, but the staff were incredibly attentive, and I had a wonderful dining experience.Every dish was truly exceptional. In particular, the Kyoto duck breast grilled over Mizunara wood was outstanding, with a perfect balance of crispy skin and juicy meat. The flavor intensified with each bite, making it the best duck I’ve ever had.The warm-aged Spanish mackerel, finished with binchotan charcoal right in front of me, was also delicious.The turnips, slow-cooked for four hours, change in flavor with the seasons, so I would love to try them again in a different season.I’m usually not a fan of certain cheeses like blue cheese, but they paired it with a sauce that made it very enjoyable.For dessert, there was a citrus dish accompanied by turmeric ice cream. It was my first time trying turmeric ice cream. While it was interesting, I personally would have preferred chocolate or citrus-flavored ice cream.During the meal, we were served two types of bread, both of which were wonderfully chewy and delicious.The final small sweets were something I didn’t have high expectations for, but they were made with great care and were quite tasty. It was refreshing to have matcha prepared right in front of me.I had a truly delightful time. Thank you for the wonderful meal.P.S. There was a candle on the table, and I noticed that the thick wick occasionally caused some wax to splatter, which was a bit distracting.
