For the past nine years, whenever I think of sushi, I’ve only been going to Sushi Dai at Toyosu Market (since the Tsukiji Market days), visiting around 60 times. However, I recently went to HATSUNEZUSHI, which was founded in 1893 in Kamata.From 2009 to 2021, it received two Michelin stars for 12 consecutive years.The white roses were beautifully blooming, giving the place an appearance that doesn’t quite feel like a sushi restaurant.At 3 PM, once all eight counter seats were filled, the Edo-period mobile stone oven made its appearance, perfectly timed to be ready for the start of the meal. This is one of HATSUNEZUSHI's specialties.The performance began with the chef placing the still warm sushi rice onto everyone’s hands.As the vinegar mixed well with the rice, they started cutting the toppings from a 136 kg tuna sourced from Izu Shimoda (Maguro Yamaji)...1️⃣ Squid tentacle dumplings 2️⃣ Seasoned red tuna 3️⃣ Melt-in-your-mouth medium fatty tuna 4️⃣ Medium fatty tuna and red tuna with smoked pickles ◾️ Lotus root and ginger pickles 5️⃣ Small horse mackerel 6️⃣ Sea bream from Imabari 7️⃣ Squid 8️⃣ Clam steamed in sake 9️⃣ Young sea bream 1️⃣0️⃣ Horse mackerel from Shimane 1️⃣1️⃣ Snow crab from Hokkaido ◾️ Pickled vegetables, Nara-zuke, etc. 1️⃣2️⃣ Marinated bonito 1️⃣3️⃣ Sea urchin 1️⃣4️⃣ 38 kg grouper from the Goto Islands served shabu-style with yuzu pepper ◾️ Fish broth 1️⃣5️⃣ Kanpyo rollThree guests requested less wasabi, as it was a bit overpowering. I can see why they felt that way.But can they really serve all this for just JPY 8,800? Isn’t that too cheap?To accommodate two rooms simultaneously, with each room having four rotations (totaling eight), we enjoyed the final dessert in the home of the fourth-generation owner on the second floor.While enjoying rooibos tea along with desserts like strawberries, matcha, and ice cream, the fourth-generation owner, Nakaji Masaru, made a surprise appearance! After chatting for a bit, he kindly showed us around his home, including the rooftop party space and even the bath.He splits his time between Italy and Japan, and his beloved dog, Lucky, stays in Italy because he can’t be on a long flight.After about 30 minutes of conversation, I felt truly fortunate to have met such a charming and wonderful person at this sushi restaurant.
