On my first visit, I was strongly impressed by the dishes that elevate the potential of fish. Upon my return, I realized that this was not just a coincidence, but a solid philosophy of the restaurant.Once again, I was captivated from the very first dish, the corn soup. It was not only sweet but also had a delightful roasted flavor, evoking the beginning of early summer.What stood out to me was the progression of blue fish starting with the horse mackerel. The presentation that showcases the ingredients transforms into a culinary experience, creating a live atmosphere where the time spent at the counter becomes part of the experience.What I particularly felt this time was the deliciousness of the fish itself. I believe it’s due to the freshness, as the texture was astonishingly plump, followed by a carefully calculated seasoning and sauce, leaving a lingering aroma and umami of the fish. It wasn’t just about "the fish is delicious"; there were layers of flavor that left me deeply moved.This experience is likely enhanced by the richness of Shizuoka as a region. The power of the ingredients and the technique to bring out their maximum potential create a remarkable experience.The flow from the flower sea bream with shrimp sauce, to the grilled white asparagus with mackerel, and finally to the signature dish of swordfish wrapped in pastry was exquisite. It wasn’t just about stacking delicious plates; the balance of flavors, temperatures, and aromas was meticulously calculated, creating a pleasant rhythm throughout the course.The interior remains as efficient as ever, and I was mesmerized by the beauty of the movements centered around Kenichi Nishi. The time spent watching the cooking process is also part of the meal, coexisting with a quiet tension and a sense of liveliness.I requested the barley squid risotto in a large portion once again. Everything was flawless until the end, further enhancing my satisfaction. Even the dessert maintained the lingering aftertaste without breaking the mood.The surprise I felt on my first visit has turned into certainty on my return. I look forward to visiting again in a different season.
