I visited a highly talked-about Chinese restaurant in Roppongi! Here, I enjoyed dishes that are based on Sichuan cuisine but infused with unique elements. The vibrant spiciness was captivating, and I found myself unable to stop eating, thanks to the perfectly crafted pairings. Starting with a refreshing chicken salad, the next dish featuring green chili and shrimp showcased the sweetness of the shrimp amidst the bold spiciness, serving as a perfect introduction to the world of Ji-Cube. Following that, I had the beef tendon in spicy broth and black pepper-flavored char siu, both of which balanced heat and sweetness beautifully. The appearance of the hot and sour noodle soup was truly shocking... The trinity of sour, spicy, and sweet flavors is something I will never forget. Then came a visually stunning dish of whelk, which paired surprisingly well with the aroma of green onions, and the "unfinished" stir-fried beef and bell pepper, where the bell pepper's flavor stood out so much that it felt like the star of the dish rather than the beef. The special spicy chicken with added Sichuan pepper was spicy! Spicy, yet I couldn't stop eating! The steamed sweet sea bream allowed me to savor its sweetness and spiciness, complemented by the delightful texture of the green onions. To finish off, the fried rice and chilled dan dan noodles had pairings that truly stood out... The selection of wine and dishes enhanced each other's flavors, and I highly recommend visiting to experience it for yourself. *Especially the pairing with the chilled dan dan noodles, which matched perfectly with the numbing flavor, was outstanding! Finally, I concluded the course with a dessert of sweet white peach and lychee, bringing the meal to a delightful end. With unique dishes and the best pairings that you can't find anywhere else, I believe this is an unparalleled Chinese restaurant at this price point. I am truly grateful to the staff!
