I had a wonderful night enjoying Omi jidori at a yakitori restaurant in Hiroshima City! This place offered a variety of dishes centered around Omi jidori from Kawakuchi in Shiga Prefecture, which I had previously introduced. It was my first time experiencing Omi jidori to this extent. The initial three types of tataki were a delightful way to awaken my appetite, allowing me to savor the differences between Omi jidori and other brands. The skewers were prepared in a unique style where the chef grilled the selected ingredients for each customer, and I ended up trying everything they offered. The rich flavors of the chicken, including the furikake, liver, and premium thigh, were complemented by summer vegetables like okra and zucchini, creating a composition that kept the drinks flowing without becoming monotonous. We also enjoyed some unique dishes like liver pâté infused with high-quality cocoa and chilled chawanmushi. The rare cuts, such as back liver and additional soris, made for an unforgettable yakitori experience. The flavors were impeccable, especially the premium thigh, seseri, back liver, and the wings of the Omi shamo, which were particularly impressive for their rich taste without any unpleasant odors. I primarily enjoyed local sake from Hiroshima, and through a casual conversation, I was treated to a complimentary drink! The enjoyable exchanges with the people at the next table enhanced the flavors of the food and drink, making it a truly memorable experience. As I reluctantly left the restaurant, I discovered unexpected connections between the local establishment and the chef, which left me quite impressed by the strong ties within this industry. I would like to express my gratitude to the staff!
