Oshiage "Yakitori Wakakusa @ Yakitori Omino"I visited the second-in-command meeting at Yakitori Omino, where a trainee has been honing their skills since February this year.While browsing OMAKASE, I found something interesting and decided to make a reservation.The main venue is the Oshiage branch, but it seems that a new location will open in Yaesu this autumn, where the head chef will also host a meeting at Tsubaki in Kyobashi.I would love to go if I can secure a reservation.On this day, the chef was Toshiki Motohashi, the second-in-command at "Omino Tsubaki," who previously worked at the Kamiyacho branch.Each second-in-command meeting has a specific theme, with previous courses featuring "Yamato Chicken" and "Date Chicken." Motohashi-san, you did a great job!Although there were some uses of Date Chicken's heart, the Ginzankakidori used as the base was so delicious that I wondered why I had never tasted it before.The meat had a firm texture and was cooked perfectly, with the appetizers functioning well as intervals between the skewers.The grains of the new ginger grilled rice were so distinct that I wanted to ask for a second helping!I was seated a bit far from the grill, so I couldn’t chat much, but there was good communication with the customers.It’s only a matter of time before they entrust the head chef position at some restaurant.
