The seasoning is gentle, making it easy to eat without getting tired, and the flavors truly resonate. The standout for me this time was the sweet shrimp paired with the fermented fish roe, along with the oysters—both had no unpleasant aftertaste, which was quite surprising.While simplicity is the restaurant's greatest strength, perhaps due to the high dependency on ingredients, I felt a mismatch throughout the course in June, like a fire-type Pokémon battling a water-type.Nonetheless, it was a thoroughly satisfying course.I’m sharing my honest thoughts based on my actual experience.
