Every time I visit, the atmosphere of the restaurant is wonderful and it really lifts my spirits. This time, I had the natural eel from Amakusa, Kumamoto. The taste is completely different between farmed and wild eel, and it’s even more noticeable when grilled with salt. To be honest, farmed eel feels a bit rubbery compared to wild eel. I mean, it’s still delicious, but when you compare them... I’d love to go back again in the fall! By the way, I wonder why it always seems to rain when I go to Kabuto.
