The moment it enters your mouth, it breaks apart beautifully, showcasing the skillful hand-pressing. They source carefully selected seasonal seafood, assessing its condition each day to apply the optimal techniques, including aging, kombu curing, and marinating, to maximize the natural flavors of the fish—absolutely delicious!The lean tuna has a rich umami with a hint of iron, while the medium fatty tuna strikes a perfect balance between the robust flavor of the lean meat and the sweetness of the fat, melting luxuriously in your mouth—so good!The squid has a delightful texture, releasing umami and sweetness with each bite, while the young horse mackerel has a pleasant acidity and concentrated flavor. The clam is rich and juicy—truly amazing!
